Not-Mince Nacho Recipe

In a food processor or Thermomix chop:

  • one onion

  • 3 x garlic cloves

  • a carrot

  • some broccoli

  • leafy greens

  • (basically any vege you have to use)


Saute the chopped vege in a little water with:

  • 1 heaped tsp of cumin

  • 1 heaped tsp of coriander

  • 1 heaped tsp of smoked paprika


Add:

  • 1/4 cup tomato paste

  • 1/2 tsp of salt

  • ground black pepper

  • 2 tbsp of coconut sugar

  • splash of ACV

  • 2 cans of drained and rinse beans (black beans/kidney beans)


Cook everything until soft, you can mash the beans if the texture of beans doesn't appeal. Give it a taste and adjust with salt, ACV or coconut sugar if needed.

It’s interesting how simple prep methods can quietly influence how people eat over time. When vegetables are finely chopped like this they blend into sauces and fillings more easily, which lowers resistance for picky eaters and reduces waste.
