Not-Mince Nacho Recipe

In a food processor or Thermomix chop:
one onion
3 x garlic cloves
a carrot
some broccoli
leafy greens
(basically any vege you have to use)
Saute the chopped vege in a little water with:
1 heaped tsp of cumin
1 heaped tsp of coriander
1 heaped tsp of smoked paprika
Add:
1/4 cup tomato paste
1/2 tsp of salt
ground black pepper
2 tbsp of coconut sugar
splash of ACV
2 cans of drained and rinse beans (black beans/kidney beans)
Cook everything until soft, you can mash the beans if the texture of beans doesn't appeal. Give it a taste and adjust with salt, ACV or coconut sugar if needed.
